Our walls are adobe. Does that change what a contractor should do?
Fundamentally, and it is worth establishing before anyone starts. Earthen walls absorb water and lose strength as they do, and aggressive drying, modern sealants and cement renders can all cause more harm than the water did by trapping moisture in the wall. Traditional materials breathe and repairs need to as well. A contractor without adobe experience is the wrong choice however good they are on framed buildings.
The parapet and roof edge seem to be where problems start.
On flat-roofed earthen buildings that is usually true. Water sitting at a parapet or a failed canale works into the top of the wall, and an earthen wall that is wet at the top deteriorates downward. Keeping roof drainage genuinely functional matters more on this construction than on almost any other, and it is the maintenance most worth doing before the monsoon rather than after.
Does the elevation matter for plumbing?
It does, and it catches people who associate New Mexico with heat. At seven thousand feet the freezing season is long enough that plumbing in an unheated space will freeze and split, and the release comes on the thaw. Insulating those runs, and draining the system in any property left unoccupied through winter, is ordinary maintenance here rather than an excess of caution.
