That the materials behave differently. Old plaster, lime mortar, and original woodwork absorb water and dry slowly, and they can be damaged by rapid drying and by modern sealants as readily as by the water itself. Replacement in kind is often impossible. Ask directly about experience with historic fabric before work starts, because the right approach is slower and gentler than a modern building would need.

Salt stays behind after the water evaporates, keeps drawing moisture back into materials, and corrodes fasteners, wiring, and mechanical components for years afterwards. Porous materials that held it generally come out rather than being dried in place. A scope written for clean water will look complete and then produce corrosion problems months later.
