How long should drying take in a stone building?
Considerably longer than in a framed one, and it should be slower on purpose. Solid masonry absorbs a great deal of water and releases it gradually, so plaster and joinery can reach target while the wall behind is still wet. Pushing the pace with aggressive equipment risks damaging the very fabric you are trying to save. Ask for readings taken in the masonry and expect weeks rather than days.
